Hi, guys! Today I’ll tell you how to make Japanese style tart cake. Tart cake is popular in my country for birthdays, bringing to friend’s houses and as a treat! There are many kinds of Tart cake like a fruit, chocolate, cheese and more.
The crust has a crunchy texture and almond cream is soft and fluffy. You can enjoy a variety of textures in one slice of cake! Let’s make it!
Ingredients : Tart mold 18cm
( Crust )
Unsalted butter 75g
Powder sugar 50g
Egg 25g
Vanilla essence Little
( Almond cream )
Unsalted butter 65g
Powder sugar 65g
Egg 65g
Vanilla essence Little
Almond flour 65g
( Custard cream )
Egg yolk 3
Milk 400ml
Sugar 70g
All purpose flour 30g
Vanilla beans 1/2
( Whipped cream )
Whipping cream 150ml
Sugar 15g
Instructions
- Make crust. Put softened butter, powder sugar and vanilla essence into bowl and mix well with mixer. Put egg in to the bowl and continue mix. When the mixture is smooth, stop mixing and add sifted flour little by little. Use a rubber spatula until combined. Put the dough into the fridge and rest for one hour.
- Make almond cream. Put all ingredients (except egg) into the bowl and mix with hand mixer until smooth. Add beaten egg little by little and mix with hand mixer until smooth and put in the fridge for one hour.
- Put softened butter on tart mold and sift 1tbs of flour (It’s easy to take the crust off after baking). Take crust dough from fridge and roll the dough until round and 3mm thickness.
- Put the dough on the mold and cut off leftovers with knife. Poke the dough with fork as demonstrated in the picture.
- Put rice or beans on the dough. Put into the oven 350F for 20 minutes.
- After 20 minutes take the crust from oven and put almond cream on the crust. And put into the oven 350F for 15-20 minutes. Allow to cool after baking until room temperature.
- Make custard cream.Soak the vanilla beans into Milk.
Mix with egg yolk and sugar until white. Put sifted flour into mixture and mix lightly. - Heat milk until almost boiling and use a strainer to remove the vanilla beans. Pour milk into the mixture.
- Put the mixture from step 8 into the pot and heat on medium until the custard is thick. (This is the most important point!)Stir custard gently with wooden spatula. It will take around 20-30 minutes.
- Chill the custard cream with ice and an ice pack. After room temperature put it into the fridge until you use it.
- Make whipped cream. Mix whipping cream and sugar with hand mixer. After a few minutes, mix with 70g of custard cream and combine. Put the mixture into a piping bag and fill the cake with cream.
- Put fruits and garnish anything you like !
